Favorite healthy meals

This might be a stretch for a topic, but I'm trying to be more focused on what I take in and I'm wondering if you have any favorite meal ideas!

I make some awesome veggie burritos. Make black beans (pressure cooker or canned). Roast some sweet potatoes with apple cider vinegar on them. Saute onions and mix in beans and potatoes. Add salsa or taco seasoning. Serve with favorite burrito toppings, I go with avacado and hot sauce on a whole wheat tortilla.
